Strawberries and Cream Sponge

Strawberries and Cream Sponge

 

Ingredients

  • 4oz Plain Flour

  • 4 Eggs 

  • 4oz Caster Sugar

  • 1tsp Baking Powder

  • 150ml Fresh Cream

  • Fresh Strawberries

Directions

  1. Preheat the oven to 180°C, 350°F

  2. Beat the eggs and sugar together in a bowl with an electric hand mixer until thick and creamy and can hold the figure eight on top.

  3. Sift the flour and baking powder together and fold in gently with a metal spoon.

  4. Separate the mixture in to two greased 8 inch sandwich tins.

  5. Bake for 20 minutes 

  6. Remove from the tins and leave on a wire rack to cool 

  7. Chop the strawberries in half and whip the cream until you have soft peeks

  8. Spread the cream generously and then cover with the strawberries 

  9. Dust with icing sugar
