Vodka Pasta

Ingredients
120g Mezze Maniche Rigate (or your favourite pasta)
3-4tbsp Tomato Puree
75g Smoked Pancetta
35g Butter
2 Shots Vodka
200mls Cream
30g Pecorino (Grated)
Salt
Olive Oil
Instructions
In a large pot (like a Dutch oven) at a medium heat fry your pancetta in the butter and a dash of olive oil until golden and crispy.
While you are crisping the pancetta, cook your pasta in another large pot of boiling heavily salted water, stirring occasionally, (follow the instructions on the packet).
Once the pancetta is crispy pour in the vodka and let cook out.
Pour in about 150mls of the cream and stir, add a pinch of salt and bring it to a light boil. Lower the heat and sprinkle in half of the grated cheese stirring again until it has combined into your sauce. Add more cream as you go if it gets too thick. Squeeze in the tomato puree and stir until it has fully mixed into the sauce and you have a bright red orange colour.
Add in your cooked pasta and stir untill the pasta is generously coated in your sauce.
Top with some more grated pecorino, serve and enjoy!
